Cucamelon & Radish Salad

Well it has certainly been a busy few months. I arrived home from Kenya to be thrust right into the second week of school, already behind on readings.

I also was happy to come home to the farmer’s market full of tomatoes and other weird things like these cucamelons. They’re tiny – the size of my thumbprint – and taste more like cucumber than melon, with a hint of sour, pickle-like flavor.

When combined with thinly sliced radish, olive oil, salt, pepper, and a splash of red wine vinegar, they’re perfect.
